This is my first time baking a carrot cake, surprisingly it's so easy. Just a piece of advise - prepare your mise en place first then you may start mixing, that's all.
Ingredients:
2 cups Self-raising flour (or 2 cups Plain flour + 2 tsp Baking powder)
2 tsp Bicarbonate soda
2 tsp Cinnamon powder
2 cups Brown sugar
3 cups Grated carrot (fine)
1 cup Chopped walnut
1 cup Chopped raisin
1 1/2 cup Melted butter
4 Eggs (Lightly beaten)

Method:
1. Preheat the oven at 170 c. Grease the baking tin with butter.
2. Sift flour, bicarbonate soda and cinnamon powder into a large mixing bowl.
3. Mix in sugar, carrot, walnut, raisin. Make sure all the ingredient are mix well.
4. Stir in the eggs and melted butter. Mix well and let the batter rest for 5minutes.
5. Pour into the baking tin and bake for 40-45minutes or simply use a dry long satay stick/toothpick inserted into the center of the cake, when the stick comes out clean its cook.

i love to make carrot cake too~ i have a similar recipe as yours, nxt time you can try to add 1 grated apple, just to make it even more moist! hehe
